Waste has been a huge point of conversation across mainstream news and social media channels in the recent years — with pictures of the ocean suffocated by a churning blanket of plastic and rubbish and landfills scarring the countryside.
Notoriously, food is being thrown out by everyone from big chain hotels to the average household. So what can we do to help?

Meet ANNA
I was born and raised in Starogard Gdanski about 50 kilometres from the coastal city of Gdansk, Poland, where I studied economics.
In 2008 through family circumstances I found myself living in the UK near Heathrow Airport. The original plan was to stay here in the UK for about three months, the months soon passed so I had to get a job. I took a job as a night kitchen porter at the Heathrow Windsor Marriott, to earn some extra money I would stay on after the night shift and work on the ‘Egg Station’ during breakfast, this was my first real taste of kitchen life and I enjoyed it.
As the time went on I started to look at the job permanently, I realised that I had found something I really enjoyed, I developed my skills and suddenly I had a passion for food and enjoyed creating new and usual concepts. That was over 12 years ago and now I'm the Head Chef at the London Heathrow Marriott Hotel. During my time at Marriott I have developed and grown not only in my career but also in a passion for sustainability and a real drive to reduce waste in anyway I can.
I am constantly looking to see how I can reduce waste in my kitchen I'm proud to say I have been able to developed soaps from waste coffee grounds, orange rind and lemon rind. I’ve now created new recipes from items that would normally be thrown away and classed as waste such as banana skins and rind of watermelon, I've also developed tea from dried avocado stone. Soap Made from food waste and natural ingredients
I make coffee soap using 35% coffee grounds and Orange Soap using Orange zest 35%, and Cold pressed oil from fruit skin
Natural ingredients are used in my scrubs
Lemon and lime zest, Crushed avocado seed, Brown sugar & Cold pressed oil from fruit skin are some of the ingredients in my scrubs
Helping save the planet one coffee grain at a time
We know that the coffee industry has an impact on the environment. Every step of the coffee supply chain, from growing and processing to shipping and roasting, uses energy in some capacity and therefore has its own carbon footprint.
But what about the waste we produce when we drink coffee – specifically, our used coffee grounds? They’re an unavoidable byproduct of coffee consumption. And while many of us assume it’s safe to toss grounds out with other organic waste, that often isn’t the case. Grounds can actually have a significant impact on the environment when they end up going to landfill.
I believe that waste is not waste until you waste it, I've been able to develop a body soap using used coffee grounds and a few other natural ingredients
